Deliciously filled sweet potatoes with chicken, beans, and cottage cheese make for a nutritious and flavorful meal.

- 4 Sweet potatoes
- 2 cups cooked chicken, shredded
- 1 cup black beans, drained
- 1 cup cottage cheese
- 1 bell pepper, diced
- 1 onion, diced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon of your favorite spice mix
Instructions
- Preheat the oven to 200°C (392°F).
- Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, until soft.
- Let the sweet potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the insides and mix with chicken, beans, cottage cheese, diced vegetables, and spices.
- Fill the sweet potato skins with the mixture.
- Return the filled boats to the oven and bake for another 10-15 minutes until heated through.
- Serve warm and enjoy!
Notes
Prepare the filling the night before to save time. These boats can also be made in an air fryer at 180°C for about 25 minutes.
