Description

Deliciously filled sweet potatoes with chicken, beans, and cottage cheese make for a nutritious and flavorful meal.


Ingredients

Scale
  • 4 Sweet potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained
  • 1 cup cottage cheese
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon of your favorite spice mix

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, until soft.
  3. Let the sweet potatoes cool slightly, then cut them in half lengthwise.
  4. Scoop out the insides and mix with chicken, beans, cottage cheese, diced vegetables, and spices.
  5. Fill the sweet potato skins with the mixture.
  6. Return the filled boats to the oven and bake for another 10-15 minutes until heated through.
  7. Serve warm and enjoy!

Notes

Prepare the filling the night before to save time. These boats can also be made in an air fryer at 180°C for about 25 minutes.
