Description

A delightful Indian dish featuring crispy fried Halloumi cheese immersed in a rich and creamy tomato sauce with warm spices.


Ingredients

  • 250 g Halloumi cheese, diced
  • 2 tbsp vegetable oil (or ghee)
  • 1 large onion, finely chopped
  • 23 cloves garlic, minced
  • 1 tsp freshly grated ginger
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 0.5 tsp garam masala
  • 1 tsp paprika
  • 400 g crushed tomatoes
  • 200 ml cream
  • 1 tsp sugar (optional)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a hot pan and fry the Halloumi cubes until golden brown. Set aside.
  2. Add the chopped onion to the same pan and sauté over medium heat until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for about a minute until fragrant.
  4. Add all the spices (cumin, coriander powder, garam masala, and paprika) and toast briefly to enhance the flavors.
  5. Pour in the crushed tomatoes and simmer on low heat for about 10 minutes until the sauce thickens.
  6. Reduce the heat further and slowly stir in the cream to prevent curdling.
  7. Gently fold in the fried Halloumi cubes and let simmer for another 5 minutes to absorb the flavors.
  8. Season with salt, pepper, and optional sugar, and garnish with fresh cilantro before serving.

Notes

Serve with naan, rice, or chapati for a complete meal. Store leftovers in an airtight container for up to 4 days in the fridge.
