Description
A delightful Indian dish featuring crispy fried Halloumi cheese immersed in a rich and creamy tomato sauce with warm spices.

- 250 g Halloumi cheese, diced
- 2 tbsp vegetable oil (or ghee)
- 1 large onion, finely chopped
- 2–3 cloves garlic, minced
- 1 tsp freshly grated ginger
- 1 tsp cumin
- 1 tsp coriander powder
- 0.5 tsp garam masala
- 1 tsp paprika
- 400 g crushed tomatoes
- 200 ml cream
- 1 tsp sugar (optional)
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a hot pan and fry the Halloumi cubes until golden brown. Set aside.
- Add the chopped onion to the same pan and sauté over medium heat until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for about a minute until fragrant.
- Add all the spices (cumin, coriander powder, garam masala, and paprika) and toast briefly to enhance the flavors.
- Pour in the crushed tomatoes and simmer on low heat for about 10 minutes until the sauce thickens.
- Reduce the heat further and slowly stir in the cream to prevent curdling.
- Gently fold in the fried Halloumi cubes and let simmer for another 5 minutes to absorb the flavors.
- Season with salt, pepper, and optional sugar, and garnish with fresh cilantro before serving.
Notes
Serve with naan, rice, or chapati for a complete meal. Store leftovers in an airtight container for up to 4 days in the fridge.
