- 1 cup green or brown lentils
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs (or flaxseed meal for vegan option)
- 1 cup breadcrumbs (gluten-free if desired)
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 tbsp lemon juice
- 2 tbsp olive oil
Instructions
- Cook the lentils according to package instructions. Allow them to cool.
- Sauté the onion and garlic in olive oil until golden brown.
- Mix the cooked lentils, onion-garlic mixture, eggs, breadcrumbs, and spices in a large bowl.
- Form small patties from the mixture and place them on a baking sheet.
- Bake the patties at 180 °C (350 °F) for about 25-30 minutes until golden brown, flipping halfway through.
- Prepare the tzatziki by combining grated cucumber, yogurt, lemon juice, garlic, and olive oil.
- Serve the lentil patties warm with fresh tzatziki.
Notes
You can prepare the patties in advance and store them in the refrigerator for up to two days. Reheat before serving.
