  • ½ cup black or Castelvetrano olives, halved
  • 2 tablespoons capers, drained
  • 1 ½ pounds white fish (e.g., cod or salmon)
  • ¾ teaspoon sea salt
  • ¼ cup fresh basil or parsley, optional

Instructions

  1. Prepare the ingredients: Chop garlic and gather all ingredients.
  2. Heat butter in a large skillet over medium heat.
  3. Add garlic and sauté for 1-2 minutes until golden and aromatic.
  4. Incorporate anchovy fillets, mashing them into the butter until combined.
  5. Pour in the white wine and simmer for about 2 minutes.
  6. Stir in diced tomatoes, oregano, thyme, and sea salt; simmer for 10 minutes.
  7. Add fish carefully to the skillet, cover, and reduce heat; cook for 5-7 minutes.
  8. Mix in olives and capers before finishing cook time.
  9. Serve with fresh basil or parsley for garnish.
