Description

A delightful blend of tender chicken and sweet mango in a creamy coconut sauce, infused with aromatic spices.


Ingredients

  • 600800g Chicken breast or thigh, cut into bite-sized pieces
  • 2 large ripe mangoes, diced
  • 1 can (400ml) full-fat coconut milk
  • 1 large onion, finely chopped
  • 34 garlic cloves, minced
  • 34 cm fresh ginger, grated
  • 12 tablespoons coconut oil or neutral oil
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon cayenne pepper or chili powder (optional)
  • Salt and black pepper to taste
  • 100150ml chicken or vegetable broth
  • Juice of ½ to 1 lime
  • 1 teaspoon honey or agave syrup (optional)
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Pat the chicken dry and cut into bite-sized pieces. Season with salt and pepper.
  2. Peel the mangoes, remove the flesh from the pit, and cut into 1-2 cm cubes. You may puree a small amount for thickness.
  3. Chop the onion, garlic, ginger, and cilantro as described.
  4. Heat coconut oil in a large pot over medium heat.
  5. Add the onions and sauté for 5-7 minutes until soft and translucent.
  6. Stir in garlic and ginger, sauté for 1-2 minutes until fragrant.
  7. Add the spices and toast them for about 1 minute, stirring continuously.
  8. Add the chicken and brown for 5-7 minutes.
  9. Pour in the broth and scrape the bottom of the pot.
  10. Add the coconut milk, stir well.
  11. Bring the sauce to a simmer, reduce heat and let it cook gently for 15-20 minutes until the chicken is cooked through.
  12. Add the diced mango and simmer for another 5-10 minutes until tender but still intact.
  13. Stir in lime juice, and adjust seasoning with salt and pepper.
  14. Garnish with fresh cilantro before serving.

Notes

This curry tastes even better if made in advance, as the flavors meld together over time.
