- 600 g chicken breast, diced
- 150 g plain yogurt
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp garam masala
- 1 tsp paprika
- 1 tsp salt
- 1 tbsp lemon juice
- 1 tbsp oil
- 2 tbsp butter
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 1 tsp coriander powder
- 1/2 tsp chili powder (optional)
- 400 g crushed tomatoes
- 150 ml cream (or coconut milk)
- 1 tsp sugar
- Fresh coriander for garnish
Instructions
- Marinate the chicken: Mix all marinade ingredients in a large bowl, add chicken, mix thoroughly, and let sit in the fridge for at least 30 minutes.
- Cook the chicken: Heat oil in a pan and sauté marinated chicken until golden brown (about 6-8 minutes). Remove the chicken and set aside.
- Prepare the sauce: In the same pan, melt butter and sauté onions until translucent (about 5 minutes). Add garlic and ginger, and sauté for another minute.
- Add spices and tomatoes: Stir in coriander powder, garam masala, and chili powder. Add crushed tomatoes and let simmer for 10 minutes.
- Incorporate cream and sugar: Add cream and sugar, and let it simmer gently for another 5 minutes.
- Return the chicken: Place the cooked chicken back in the pan and let it simmer for an additional 5 minutes.
- Serve: Garnish with fresh coriander and enjoy warm with basmati rice or naan.
Notes
Marinate the chicken overnight for deeper flavors. This dish also tastes better the next day.
