- 4 Firm apples (e.g., Honeycrisp or Granny Smith)
- 1 cup feta cheese (crumbled)
- 1/2 cup dried cranberries
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/4 cup honey (or maple syrup for vegan version)
- 2 tablespoons butter (use plant-based for dairy-free)
- 1 tablespoon fresh mint (chopped)
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease the baking dish.
- Wash the apples thoroughly, cut off the tops, and carefully core them to create space for filling.
- In a small bowl, crumble the feta and add the cranberries, cinnamon, vanilla extract, and chopped mint. Mix well.
- Spoon the filling generously into each prepared apple, ensuring it’s packed in.
- Place the apples in the greased baking dish and drizzle honey (or maple syrup) over them. Scatter the butter pieces around.
- Bake the apples for about 25-30 minutes, or until soft and golden brown, checking occasionally.
- Remove the apples from the oven and let them cool slightly before serving. Enjoy warm, maybe with a scoop of vanilla ice cream!
Notes
Prepare filling a day ahead and fill the apples in the morning for fresh baking. Use an air fryer at 160°C (320°F) for 15-20 minutes if preferred.
