Description

Delicious baked apples filled with feta, honey, and cranberries, perfect for fall or winter gatherings.


Ingredients

  • 4 Firm apples (e.g., Honeycrisp or Granny Smith)
  • 1 cup feta cheese (crumbled)
  • 1/2 cup dried cranberries
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 cup honey (or maple syrup for vegan version)
  • 2 tablespoons butter (use plant-based for dairy-free)
  • 1 tablespoon fresh mint (chopped)

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease the baking dish.
  2. Wash the apples thoroughly, cut off the tops, and carefully core them to create space for filling.
  3. In a small bowl, crumble the feta and add the cranberries, cinnamon, vanilla extract, and chopped mint. Mix well.
  4. Spoon the filling generously into each prepared apple, ensuring it’s packed in.
  5. Place the apples in the greased baking dish and drizzle honey (or maple syrup) over them. Scatter the butter pieces around.
  6. Bake the apples for about 25-30 minutes, or until soft and golden brown, checking occasionally.
  7. Remove the apples from the oven and let them cool slightly before serving. Enjoy warm, maybe with a scoop of vanilla ice cream!

Notes

Prepare filling a day ahead and fill the apples in the morning for fresh baking. Use an air fryer at 160°C (320°F) for 15-20 minutes if preferred.
