- 2 Lemons (Zested and Juiced)
- 2 tablespoons Olive Oil
- 2 Cloves Garlic (Minced)
- 1 Cup Chicken Broth
- 1 teaspoon Dried Oregano

- Salt and Pepper to Taste
- 1 Cup Rice
- 2 Cups Water

Instructions
- In your slow cooker, combine the lemon juice, lemon zest, olive oil, minced garlic, chicken broth, oregano, thyme, and a sprinkle of salt and pepper. Whisk together until well-blended.
- Nestle your chicken into the marinade, ensuring it is thoroughly coated.
- Cover your slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before the chicken finishes cooking, rinse the rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring it to a boil, reduce the heat to low, cover, and let it simmer for 18-20 minutes.
- Once the chicken is done, shred it gently with forks if desired. Serve it over the fluffy rice and garnish with freshly chopped parsley and lemon slices.
Notes
Marinate the chicken overnight for enhanced flavor. Rinsing the rice is crucial for fluffiness.
