Description

A comforting one-pot dish that combines Cajun spices with creamy Alfredo, served over orzo pasta.


Ingredients

  • 1 lb boneless skinless chicken breasts (diced)
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp olive oil
  • 1 cup diced onions
  • 2 cloves garlic (minced)
  • 1 cup bell pepper (diced, optional)
  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, warm the olive oil over medium heat. Add the diced chicken and season with Cajun seasoning, salt, and pepper. Sauté until golden brown, about 5 to 7 minutes, then remove the chicken and set aside.
  2. In the same pot, sauté the diced onions and minced garlic for about 2 to 3 minutes. If using, add the diced bell pepper and cook until softened.
  3. Stir in the orzo pasta and lightly toast for 1 minute. Then pour in the chicken broth and heavy cream, bringing the mixture to a gentle boil.
  4. Reduce heat to low, cover the pot, and let it simmer for 10 to 12 minutes, stirring occasionally until the orzo is tender and has absorbed the liquid.
  5. Return the cooked chicken to the pot and add the grated Parmesan cheese. Stir until the cheese melts and everything is well combined. Adjust seasoning as needed.
  6. Serve warm, garnished with fresh parsley.

Notes

Feel free to substitute chicken with shrimp or a plant-based protein. Customize with additional spices or vegetables as desired.
