A comforting one-pot dish that combines Cajun spices with creamy Alfredo, served over orzo pasta.

- 1 lb boneless skinless chicken breasts (diced)
- 1 tbsp Cajun seasoning (adjust to taste)
- 1 tbsp olive oil
- 1 cup diced onions
- 2 cloves garlic (minced)
- 1 cup bell pepper (diced, optional)
- 1.5 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese (grated)
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a large pot, warm the olive oil over medium heat. Add the diced chicken and season with Cajun seasoning, salt, and pepper. Sauté until golden brown, about 5 to 7 minutes, then remove the chicken and set aside.
- In the same pot, sauté the diced onions and minced garlic for about 2 to 3 minutes. If using, add the diced bell pepper and cook until softened.
- Stir in the orzo pasta and lightly toast for 1 minute. Then pour in the chicken broth and heavy cream, bringing the mixture to a gentle boil.
- Reduce heat to low, cover the pot, and let it simmer for 10 to 12 minutes, stirring occasionally until the orzo is tender and has absorbed the liquid.
- Return the cooked chicken to the pot and add the grated Parmesan cheese. Stir until the cheese melts and everything is well combined. Adjust seasoning as needed.
- Serve warm, garnished with fresh parsley.
Notes
Feel free to substitute chicken with shrimp or a plant-based protein. Customize with additional spices or vegetables as desired.
