- 4 chicken thighs
- 2 tablespoons chipotle honey
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 ounces smoked gouda, shredded
- 2 tablespoons butter
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the chicken thighs with chipotle honey, smoked paprika, salt, and pepper.
- Place them in a baking dish, skin-side up.
- Bake for 25-30 minutes until cooked through (internal temperature of 165°F).
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain and return the potatoes to the pot to evaporate excess moisture.
- Add milk, smoked gouda, and butter; mash until smooth and creamy.
- Serve the chicken thighs with smoked gouda mashed potatoes.
Notes
For best flavor, marinate chicken thighs for at least 30 minutes. You can use an air fryer for the chicken as an alternative cooking method.
